If you walk through Maastricht in the morning you will not escape the delicious smell of fresh 'vlaai' from our bakeries. Vlaai is regarded as a typical dish from 'Limburg'. Lets give it a try to explain it!

Vlaai consists of a bottom of dough (usually with a diameter of 27 to 30 centimeters), which is flat, with raised edges. The vlaai is then usually filled with fruits, such as gooseberries, cherry, plum, apple, apricot lentils or rice. Originally, no whipping cream is used, even though it is often common ingredient nowadays . Flanders are essentially different from pie because the bottom is made of another kind of dough. Vlaai dough is a lot lighter and resembles bread dough.

Bakkerij Souren

Souren Bakery has been a part of the citycenter of Maastricht, for more than 120 years. The bakery is less familiar with the vast crowd, but the locals are particularly pleased by their quality of 'vlaai'. Souren is a small bakery in a narrow alley aside from the city's main shopping street. So don't forget to take a look (or a sniff) when your nearby.

De Bisschopsmolen In a cute Maastricht street in the heart of the city you will find the Bishopsmolen. A bakery where you can find Netherlands's oldest rotary water mill. You can sit down for a delicious piece of vlaai, pick up a vlaai for home or even better: make your own vlaai with the help of the baker. Fun fact: about the Bisschopsmolen: it is the first 100% spelt bakery in the Netherlands.

Mathieu Hermans

Last but not least my favourite vlaai bakery from Maastricht: Mathieu Hermans. I am already able to smell the aromas when i think about their delicious vlaai. Not for nothing because this in 1936 opened bakery was named the best vlaai baker of the Netherlands in 2013. That promises a lot of good. When you step in, the smell of freshly baked vlaai meets you, the vlaai is baked according to an old family recipe. Mathieu Hermans is a perfect place to take a vlaai for home.
